Tomato Basil Parmesan Soup

A couple of days ago, I was craving soup.  I love cheese soups, but unfortunately I'm the only one in my household who does like them, so I usually share whatever I make with my mom.  Tomato Basil Parmesan soup filled the bill.  

It does take a bit of time to make, but the payoff is worth it!  It's spicy.  It's creamy.  It's tomatoey.  It's yummy, and it is filling!  What's not to like?  Plus, it makes a ton of soup, so there is plenty to eat and plenty to share.  Serve this with an antipasto side, such as olives and cheese, plus a crusty bread or just good old-fashioned crackers.  


Tomato Basil Parmesan Soup

 ½ stick butter

1 cup minced onion (about 1 medium onion)

1 cup chopped celery (about 4 stalks)

1 cup chopped carrots

2 cans (14 to 14.5 oz.) diced tomatoes, undrained

3 cups chicken broth or reconstituted bouillon

1 teaspoon dried oregano

1  Tablespoon dried basil

1 bay leaf

2 cans cream of chicken soup

1 can 12 oz. can evaporated milk

1 cup parmesan cheese     

Salt and pepper to taste



In very large sauce pan, melt butter over medium-low heat.  Add onion, celery, and carrots and allow to cook until onions are translucent.  Increase heat and add tomatoes, broth, oregano, basil, and bay leaf.  Cover, bring to boil, then reduce heat and simmer for 30 minutes.  Remove lid and add cream of chicken soup.  Blend well.  Add milk and blend.  Add parmesan cheese and blend.  Cover, reduce heat to low and allow to heat through for approximately 5 minutes.  Salt and pepper to taste.

Easy Broccoli Cheese Soup

I love broccoli cheese soup.  It's warm, it's comforting, it's tasty, and it makes a great lunch.  I have seen so many recipes that call for an elaborate cooking process for making this yummy soup.  Upon examining the ingredients, I discovered that it was a cream soup base with broccoli, cheese, and other spices added in.  It didn't take me long to figure out there was an easier way!  So here it is.  My "recipe" for easy broccoli cheese soup. 

And it has only two pre-packaged ingredients! Actually three if you include the milk. 

Here's how it you make it. You use the two items shown above. Yes, that's really it!  It's so easy, and it tastes wonderful. 

EASY BROCCOLI CHEESE SOUP
1 box frozen broccoli and cheese sauce (10 oz.)
1 can cream of chicken soup (10 oz.) 
1 can milk 
Milk to thin to desired consistency 

Microwave broccoli and cheese sauce as directed on package.  While that is cooking, in a medium saucepan over low heat, begin preparing cream of chicken soup.  I recommend using milk because water will make the cheese and cream separate.  Whisk soup in sauce pan until thoroughly mixed.  Once broccoli and cheese are finished cooking, open the plastic package and add broccoli and cheese sauce to soup.  Stir thoroughly to combine.  Thin with more milk to desired consistency.  Serve with bacon bits, fresh ground pepper, salt, and crusty bread. 

If you would like to make this a little more homemade tasting, prior to making soup, you can sautee about 1 tablespoon minced onion in butter.  Then add soup and prepare as usual. 

That is it.  The easiest broccoli-cheese soup you will ever make!

Broke Food - Quesadillas

It's down to the wire, payday's tomorrow, and you surf the fridge looking for something to eat.  The pickings might be slim.  Except.... you have a tortilla, some cheese, and a tiny package of leftover salsa from a fast food drive-through.  That's all you need!  You have all the ingredients for a quesadilla! 

I like the fold-over quesadilla method, but some like to make their quesadillas with two tortillas.  Since this is broke food (i.e., cheap, yummy, filling, and made from what you have on hand), we'll go with whatever you have in your fridge and cupboard.  Here is what I had, but see the recipe below to make a basic quesadilla: 



Basic Cheese Quesadilla
Ingredients:
Tortillas (flour or corn; both work fine, but I prefer flour)
Shredded cheese or cheese slices, any kind
Butter, oil, Pam, or nonstick surface frying pan 
Whatever condiments you have in your fridge

Place butter or oil in a frying pan and allow to heat.  Make sure the surface of the frying pan is covered with the fat of choice. (If you're using a nonstick pan, skip this step, but I do prefer some type of fat to help the quesadilla brown on the outside.)  Place tortilla in the pan and allow it to heat well for about a minute.  Place cheese on 1/2 of the tortilla and allow to heat for a minute or two more.  Fold the tortilla over the cheese and press down gently with a spatula so that the tortilla touches the cheese and the cheese smooshes.  Allow to heat through for another second or two, and then remove the quesadilla to a plate. 

Slice into triangles and serve with any extra condiments you have in your fridge. I hoard salsa and sauce packets from fast food restaurants.  The salsa served with this was from my son's order from Taco Bueno 2 days ago, but I also have a love affair with Taco Bell's Fire Sauce. (Restaurants around here have a taco fixation, apparently, because we also have a Taco Mayo!)

If you have any extra proteins or veggies, you can add those to the quesadilla.  Ideas include: 
  • Leftover shredded chicken or beef
  • Cut up green onions or diced onions
  • Diced/sliced green peppers
  • Jalapenos
  • Diced bits of deli meat, such as chicken, turkey, or ham
  • Olives 
  • Guacamole (for a dip, or add it with the cheese if you don't mind it heated up)
  • Refried beans 
These are easy to whip out, and they're filling.  This was always what my grandmother made for me if I went to her house after school because it was easy for her to fix, and they were yummy!
Using what you have on hand can also make for some interesting combinations and use up small bits of leftovers that may be languishing in the fridge.  Put them with a little cheese, tortilla, and heat, then enjoy!

Freezer to Crockpot - Mexican Casserole


This is a fun, simple, and easy Mexican casserole that tastes great.  It's easy to throw together, and it works great for a freezer to crockpot recipe.  It's spicy comfort food that's a hot, filling meal.  

We usually make this in the oven, but our schedules have been so busy lately that the crock pot has been our go-to cooking venue.  I decided to try this for the crock, and it was easy as making it in the oven*.  

MEXICAN CASSEROLE 

1 to 1.5 pounds ground beef, browned, drained, and rinsed 
1 15-17 oz. can Ranch Style beans
1 can cream of chicken soup
1 14 oz. can RoTel tomatoes ( or diced tomatoes with green chiles)

When ready to cook, about 1-2 cups crushed tortilla chips, shredded cheese, sour cream, and salsa. Do not put the tortilla chips in until right before you're ready to serve.  Otherwise, you'll end up with a soggy mess! 

Brown ground beef, drain, and rinse.  In 1 gallon zippered freezer bag, place ground beef, ranch style beans, chicken soup, and tomatoes.  Squeeze out air and seal, then "massage" bag to mix ingredients well.  

When ready to cook, place mixture in crock pot and cook on low for 6-8 hours.  Approximately 10 minutes before serving, top with crushed tortilla chips.  Serve topped with shredded cheese, sour cream, and salsa.  

*The oven version of this is the same, except when you're ready to cook it, divide the crushed tortilla chips and place a layer on the bottom of the pan, top with casserole mixture, then top with more crushed tortilla chips.  Bake at 350 for 20-25 minutes, top with cheese, then return to the oven for about 5 minutes or until cheese melts.

Creative Cooking - Grilled Chicken with Chipotle-Bacon Aflredo Sauce and Penne Pasta





 We grilled out a couple of nights ago, and there was one chicken breast remaining. This Chipotle-Bacon Alfredo sauce over penne pasta was a great solution for using that lone leftover chicken breast.  It came together easily and consisted of items I had in my cabinets.  This made a ton of food, enough for two servings plus lunch and dinner the next day. 



GRILLED CHICKEN WITH CHIPOTLE-BACON ALFREDO SAUCE OVER PENNE PASTA

1 grilled chicken breast sliced/diced into pieces
1-2 strips of bacon
1-2 Tbsp. chopped onion
1 can diced tomatoes with Chipotle chiles (I used Red Gold Tomatoes with Chipolte seasoning, but you might have to substitute a can of diced tomatoes with about 1 tablespoon diced chipotle peppers)
1 jar alfredo sauce
About 1 cup shredded cheese (I used Colby-Jack)
4-6 servings of cooked penne pasta

In a large frying pan, fry the slices of bacon until crispy. Remove from pan. Saute chicken and onion in bacon drippings until onion begins to turn translucent. Add can of tomatoes with chipotle and stir together with chicken and onion. Allow to cook until liquid from tomatoes has reduced down. Add alfredo sauce and shredded cheese, cooking to combine and until shredded cheese melts.  Stir in crumbled bacon.  Serve over penne pasta.
